Lower ABV Josselin Bouet’s grandparents farmed Muscadet grapes in his home of Pallet before selling the vines his parents didn’t want. After learning winemaking from neighbors, Bouet re-acquired his grandparents’ vines to make Muscadet “Selon Moi” – according to me. He picks his Melon de Bourgogne grapes super fresh at 12.5% alcohol and gives them plenty of time to rest on the fine lees (spent yeast cells) before bottling. Fractured slate, sea salt, gravel, iodine, white flower and yeasty lees aromas and flavors pair up with green melon and apple flavors that peak out mid-palate and then grow/come forward through a sharp, stony, finish. Put “Chablis” on the label, and this is $30+ wine on sale. For under $20, nothing we know of comes close.
For You If: You’re all about minerality in wine or want to know what “minerality” smells and tastes like; descriptors like “savory” and “mouth-tingling” make you excited; you’re going to eat some shellfish and want the very best wine paring you can imagine.
Not For You If: Fruitier wines like Sauvignon Blanc, Verdejo, etc. are what you crave; you prefer whites to show some oak and plenty of body; you’re eating food with a trace or more of sweetness – this is dry wine for salty/savory food.
