Illahe is probably best known for their Project 1889 Pinot, a wine made entirely by hand, without any electrical equipment, and transported to Portland from the Valley by mule-drawn coach, canoe and cargo bycycle. Bon Sauvage is a little more modern, a barrel selection of estate fruit done with native yeast and 16 months in 25% new French oak. The barrel gives a chocolate/vanilla sheen to the rich raspberry and strawberry fruit and nicely shapes the rich, almost creamy, finish. Fun to drink and big enough for steak.
For You If: You're after Willamette Valley Pinot with plenty of richness, spice, and chocolate/vanilla depth; you want a Pinot that will do just fine paired up with a juicy grilled steak.
Not For You If: You're in the mood for elegance or something light/fresh - this is nicely ripe and rich.
