Organic/Bio Lower ABV One sniff and taste and it will be clear: this is classic Chablis, showcasing apple and stone fruit, a pop of citrus, and a salty/stony minerality that refreshes and makes Chablis such a great shellfish pairing. It’s made by Fabien Dauvissat, member of one of four Dauvissat families making Chablis today (and no relation to Vincent). There’s enough concentration to invite solo sipping here and it will be even better with clams!
For You If: You’re in the mood for pure, unfussy, unmanipulated, Chablis Chardonnay with crisp green fruit and lots of seashell/salt on the finish.
Not For You If: You’d enjoy something with lots of richness or oak – this is crisp and done all in steel.
