Organic/Bio Lower ABV Patrick Maroiller was a pioneer of organic farming in Burgundy and he and his son, Stephane take that kind of approach to winemaking, too. Grapes are fully destemmed, ferment with native yeasts, move through the tiny, cramped, cellar by gravity and age in mostly used wood. The results are beautiful, consistently deeply perfumed, silky in texture, and flowering on the palate through long, flowing, finishes. That's what to expect from this classic Gevrey with lovely fruit and a fine mineral spine. Delicious.

Not For You If: You're looking for a lot of whole cluster spice and grip or overt new oak - his is all destemmed and shows very modest oak influence.
