This is the Valpolicella trio of Corvina, Corvinone and Rondinella that’s crushed and then fortified with second press wine from the winery’s Valpolicella red. Done all in cement with native yeast and just a squirt of sulfur for stability, it’s bursting with juicy blackberry and raspberry fruit with a hint of violets and wild herb. Just a touch of tannic structure here and only 10.0% alcohol, making it a fine choice for enjoying with or without a chill with everything from fresh fish to salami and cheese.
