Lower ABV As Vinous says, “Servin is a rather under-estimated Chablis producer” as Austrlian-born winemaker Marc Cameron turns out classic, cellar-worthy, Chablis year-after-year. This is from the top 1er Cru in Chablis, shows the richness of the vintage and site in texture while shining with transparency, cut and salty minerality, especially on the long, stony, finish. As Burghound says in the 91-93 point review, it shows a “pure and elegant nose of spicy floral, apple and ocean spray. I very much like the texture of the vibrant and stylish middleweight flavors that flash ample minerality on the youthfully austere and long finish where a touch of bitter lemon zest slowly emerges. Lovely.”
For You If: You like the feel, flavors, textures and salty minerality of classic 1er Cru Chablis; you’re in the mood for Chablis that works the way it should with oysters and shellfish and has the stuffing to satisfy solo and with more age.
Not For You If: You’re after a markedly fruity Chablis – this is more about stones and salt – or one that shows much barrel influence – this was made all in stainless steel.
