One of the best values in this wildly overlooked wine category we’ve seen in years. Aged 10 years under flor (like a Fino) and then 5+ years in cask to develop color and wildly delicious nutty flavors. If you were walled up with a cask of this bone dry Sherry, you might just be ok. The 17.5/20 point review in JancisRobinson.com for a previous release captures this perfectly: “This is a tight and extremely concentrated Amontillado, great intensity, expression and saltiness. Extremely complex showing dry fruits, tobacco, cloves, clean oak and touch of yeast. I am very astonished and enthusiastic about the finesse of this Tío Diego.”
