Organic/Bio Lower ABV A substantial departure from the ripe and fruity Macon wines we see so often, this is organically farmed Chardonnay, picked fresh, fermented long (9 months) and kept still in steel until bottling with minimal sulfur. Like a wine from the Cote d'Or to the north, or even Chablis further north still, it delivers crisp green apple and citrus fruit with fine body and a crisp, mineral, dry finish. A great wine for goat cheese and seafood.
For You If: You like your Burgundy Chardonnay to have plenty of vibrancy and minerality, similar to Chablis but with a touch more body and roundness.
Not For You If: You're in the mood for something oaky/rich - this is all steel and is finely chiseled vs rich.
