Organic/Bio Lower ABV The Cistercian order of nuns at Monastero Suore Cistercensi, near Vitorchiano in Lazio planted their vineyard in 1963, but it wasn’t until the early 2000s that they began working with Umbrian consultant Giampiero Bea and the wines got really interesting. As importer Neil Rosenthal says, "The "winery" is nothing more than a toolshed packed to the gills with old steel tanks, fiberglass containers of various sizes, and glass demijohns tucked here and there-proving yet again that it takes the barest minimum to produce a wine of character and truth."
Their white is a wild blend of Trebbiano, Verdicchio, and Malvasia picked and fermented together with native yeast and no sulfur. There's a touch of orchard and stone fruit here, but the wine is really all about wild aromas and flavors of fennel frond, chamomile, sliced almonds, hot stones and other savory notes. Super fresh with real grip, this will fascinate you across and evening especially with really good, simple, foods like grilled scallops or even just lentils and pasta.
