Beerenauslese (“individual berry selection”) is a wine made from hand-selected individual grapes that have been affected by botrytis cinerea or ‘noble rot’, a fungus that dehydrates the berries and adds a unique honeyed flavor to the wines. This “BA” is from 100% Sylvaner, a nicely sharp grape that has the acidity to perfectly balance the super-sweet, honeyed, richness. A great match for apricot tart, pineapple upside down cake and rich cheeses.
