Lower ABV This is the current release of Cote de Lechet from Defaix, and that alone should tell you that you’re in for something a little different than the “typical” Chablis. Daniel is the 14th generation of the Defaix family to grow and make Chablis wine and his son, Paul-Etienne, has now joined to make 15 passings of the baton from father to son. Wine making is all in tank, with a cold fermentation for three weeks followed by 3-5 years in tank on the lees and then more time in bottle until Daniel determines the wine ready to drink.
Importer Neil Rosenthal sums up the wine nicely: “A master class in mineral precision. This remarkably steep site (a 45% gradient) with very poor soil produces a wine that Danny describes as embodying “the real, true mineral expression of Chablis.” Freshly blasted chalk dominates the nose, with notes of lemon, honey, and fresh herbs lurking underneath; still, this is a wine of minerality first and foremost." Delicious mature Chablis.
For You If: You're looking for the perfect match for razor clams, oysters, or pretty much anything just pulled from the sea and served raw or with minimal garnish or fuss; you like Chablis that screams "Chablis" - all about the minerality and cut.
Not For You If: You're looking for softer, rounder, cocktail, Chablis - this has plenty of body but the fruit is in the back seat and the stony minerality is driving the bus here.
