A wonderfully fresh and vivid style of (just barely) pink Champagne. Oeil de Perdrix means "eye of the partridge" and applies to a Champagne that picks up just a touch of color from black grapes in the press. The wine is given a very short time on the lees after secondary fermentation - as little as 15 months - to preserve freshness and lightness of texture. Wine Advocate's 92 point review of the previous release is spot on for this edition as well: "Only very delicately tinted (keen amateur cooks will think of the skin of a Roscoff onion). Exhibiting aromas of crisp stone fruits, white flowers, buttery pastry and subtle hints of honeycomb, it's medium to full-bodied, pillowy and seamless, with fine depth at the core, lively acids and a beautifully refined mousse."
