We'd tell you that this tastes like really good Saumur Blanc but with bubbles...but we know that doesn't mean much! It's a blend of 50% Chenin Blanc, 25% Chardonnay and 25% Cabernet Franc blended and turned into sparkling wine like Champagne. There's a lovely creamy/chalky contrast in the rich texture and intense Chenin Blanc flavors of quince, beeswax, stone and smoke that are lifted nicely by the small, very fine, bubbles. Bone dry, very complex, and deeply satisfying, this is an excellent value in compelling fizz.
