Lower ABV Francis Boudin captures the essence of the sunny Fourchaume vineyard here in a rich and nicely fresh, no-oak, Chablis. The wine smells and feels nicely concentrated and deep with green orchard fruit, fresh citrus and a smoky minerality that grows on the dry, almost dusty, finish. This will work in all the usual Chablis situations and also as a solo-sipper/cocktail white where the richness buffers the acidity and minerality nicely.
The Boudin family is virulently anti-oak, more from history than winemaking reaons. Francis’s dad, Adhemar, grew up in his father’s cooperage and hated everything about it – the noise, the smell, the mess. So when he started his winery, he refused to have a barrel in the place! And since the wines are good, Francis sees no reason to change.
