Organic/Bio Lower ABV The 3HA plot of 50 year-old vines across from Mont de Milieu was meant to be a test for the winery’s conversion to organic farming. But the wine was so good that today it’s bottled on its own. Nicely salty and with green pear, apple and lime fruit, this has plenty of body through the middle before finishing crisp and dry with plenty of seashell mineral notes. Open enough for sipping and terrific with food.
For You If: You’re looking for village Chablis with just a touch of something extra – like here from organic farming and old, old, vines.
Not For You If: You’re looking for the spice and texture of oak – this is made all in steel to let the fruit and minerality shine through.
