Organic/Bio Lower ABV If Thibert's 2020 Macon-Verze is full of boundless energy and confidence, his Pouilly-Vinzelles (from next door to Fuisse) has all the same energy but starts off a bit gawky and unsure. Give it a splash decant and 30 minutes (or a year or two in cellar), though, and it gathers itself beautifully and shows off lovely poise and grace. Tangy lemon curd, sliced yellow apple and pear, a touch of hazelnut and sweet spice aromas and flavors are lifted by pinpoint acids and plenty of chalky minerality. Both richer and even more vivid than the Macon-Verze, this makes a wonderful companion to buttery seafood and roasted poultry dishes.
"Moderate wood is present but not invasive while allowing the ripe essence of pear, anise and acacia blossom to be appreciated. There is again fine underlying tension to the mineral-inflected and well-detailed middle weight flavors that terminate in a lingering and youthfully austere finale. This isn't exactly rustic though it's clearly not as refined plus it could use better depth so a few years of keeping are advised."
