Organic/Bio Lower ABV A stunning value in top-notch Muscadet from the important Chateau Thebaud Cru. Antoine Delaunay farms his vines organically, uses no sulfur in the winery until a tiny touch at bottling, and gives all his wine plenty of time sur lie - resting on the fine residue of yeast cells left over from fermentation - to add texture and balance Melon de Bourgogne's firm acids.
This cuvee starts off as especially sharp, so Delaunay puts it into glass-lined concrete tanks buried in the floor of his cellar and lets it rest for six years. Add another 4+ years in bottle, and you might expect something "mature." Nope, this is super vibrant, crisp, fresh and chalky, with lime zest and green apple fruit and loads of seaside salt and seashell complexity. Brilliant.
For You If: You're eating raw or simply steamed shellfish - if there's a better wine to bring out the flavors of the sea, we can't imagine it!
Not For You If: You're in the mood for something simple, soft and/or fruity - this is wildly complex, firm and loaded with flavors of the sea.
