You. Need. To. Try. This. Out of the fridge and into an empty glass or from the cellar over a big ice cube. You’ll taste…well, I can’t really describe it. Morello cherries, pine and wild herbs, wild spice flavors that explain why people used to fight over the spice islands of the south Pacific. And then when you expect a typical vermouth burst of sugar and bitter bite? Something subtle, lightly drying and not really sweet at all.
It's almost like a pair of stylish Italian architects whose families made wine moved to Barcelona, discovered a Penedes farm dotted with abandoned, old, native Catalan grape vines, and created a new winery just to bring those old grapes to us. Which actually is what Massimo Marchiori and Antonella Gerosa did. They make this from those old varietals – one barrel of old red, one of young red and one of oxidized white – plus a bit of brandy, a secret blend of herbs and bittering agents from their home in Torino, Italy, spices and more. And just a tiny bit of sugar. You’ll love this in a Negroni or Manhattan, but the real way to enjoy is cold in a glass. Ideally with something salty to nibble on. This stuff is terrific and you really need to give it a try.
