Organic/Bio Lower ABV On the “left bank” of Chablis, Cote de Lechet benefits from steep slopes (up to 38%), plenty of Kimmeridgian marl, excellent drainage and ample sunshine – all particularly welcome in 2021! This is the steeliest vintage of Cote de Lechet we’ve ever tasted with oodles of drive and crisp citrus and minerality. Normally it’s done all in tank, but the super-short 2021 harvest meant the winery needed to put about one-third in three year-old barrels (if only to keep the barrels full and in good health). A happy accident, as the time in cask softened the wine’s edges just a bit while adding a very subtle spice. Marvelous!

“Sweet Spot Outstanding. Ripe yet fresh and airy aromas include those of the hallmark citrus confit, quinine and floral nuances, all of which are trimmed in discreet oak. The medium-weight flavors are rich to the point of opulence thanks to the abundant dry extract that coats the palate on the clean, very dry and youthfully austere finale. This is impressively dense yet manages to retain a sense of refinement.”
