Organic/BioIn the 19th Century, the wines of Chitry were sold as “Chablis” and, even today, most wine grown in Chitry is a very Chablis-like Chardonnay. But warmer slopes and ancient limestone soils bring Pinot Noir to vivacious ripeness here as well, giving wines of such highly regarded quality that they have been bottled as Bourgogne Chitry since the 1920s.
The young sister/brother team of Aurelie and Thibaut Giraudon grow wine on about 60 acres in Chitry, just outside of Chablis in northern Burgundy. Thibaut harvests each plot of their 15 acres of Pinot when the flavors are ripe and then Aurelie ferments each lot in vat and tank. The bottlings blend richer, riper, fruit from south-facing slopes with more vivid, crisp, Pinot from north-facing sites.
In 2021, the result is really good bottle of red Burgundy. You’ll taste and feel the small crop and hot summer in the rich cherry and raspberry fruit and the velvety plush mouthfeel. And you’ll love the classic Burgundy Pinot subtleties of wild flowers, cinnamon spice, and damp earth preserved in their cooler vineyards. And the distinctive minerality and acidity delivered by Chitry’s limestone and chalk Kimmeridgian keeps things vivid and pure and gives this the structured needed to enjoy with salmon, roasted birds, charcuterie and more. The fruit is very present and delicious right now, but you’ve got 5-7 years easily for more earthy, mineral, aspects to emerge. Delicious wine and stellar value.
