Although I suppose you could use it in a cocktail, this if vermouth to drink like wine, cool from the cellar or a short stay in the fridge and in a white wine glass. As Kelley’s collaborator on this project, Stephanie Sprinkle, says, “Vermouth is a bittersweet botanical wine. This is a bittersweet story about a vermouth born from fire.” In the smoke-tainted 2020 vintage, Kelley sent a chuck of what would have been her Maresh Vyd Pinot Noir for distillation to Lynsee Sardell, owner and distiller of Big Wild Spirits. That brandy was used to fortify a blend of 2020 Freedom Hill, Canary Hill and Maresh Vyd Pinot Noir and to create extracts from 35 plants and spices. Except for spices not grown there, all of the botanicals came from organic growers in Oregon or were wild foraged. Days of blending trials and a touch of sugar to balance things out created this wildly complex, just barely bittersweet, and just 15% alcohol.
I’m not even going to attempt a tasting note. As Kelley’s Pinot Noirs are to most others – more transparent, vivid, pure and alive – so this is to most other red vermouths. Both the sweetness and bitterness are perfectly judged to make your mouth water and get you ready to eat (or digest) some good food. Kelley’s comment seems right to me: “Every time I open a bottle, I finish it, no matter how much I resolve to put on the brakes. It is by far the most delicious and nourishing vermouth I have ever tasted, and I drink Vergano (Americano more than the Chinato) just about every weekend. It's best chilled and keeps up to a week if refrigerated. But good luck taking that long to finish the bottle!”
