Organic/Bio Lower ABV Christophe Thibert is quiet, careful, a bit intense and always deeply thoughtful. This is the one wine he makes that really isn't much like his own personality at all! It bounds into the room with a big smile, oodles of barely controlled energy, and a contagious laugh that makes everyone look up and ask, "Can I join the party, too?" But still has enough substance and class that you're delighted to be hanging out with it after several hours have passed by.
It's all Chardonnay grown by Christophe in Macon-Verze, picked at around 12.5% potential alcohol, and turned into wine mostly in stainless steel (with about 10% spending a few months in barrel for extra spice). It's deliciously fresh, crunchy and mouthwatering, redolent of crisp pear and apple, lemon marmalade, and fine spice aromas and flavors. A burst of chalky minerality on the generous finish reminds you that the party is in Burgundy vs California. And makes you glad you're there. Yum.
"A discreet application of wood sets off the slightly riper aromas of citrus confit, white orchard fruit and hints of vanilla and anise. Once again there is very fine density on the caressing yet reasonably precise flavors that are more mineral-inflected, energetic and lingering finish that possesses a chalky texture. Lovely for what it is."
