Organic/Bio Lower ABV Organic fruit, minimalist winemaking, and perfectly ripe at just 12.7% alcohol, here is a terrific Chablis value that was made all in stainless steel and held back at the winery for us for the past year. Enough body and roundness to serve as an all-purpose house white but with plenty of classic Chablis stony, salty, minerality and tangy green fruit, too. You'll love how the flavors build on your palate from sip-to-sip, starting crisp and mineral and then gaining depth as the fruit slowly unfolds. No problem cellaring this through 2028 or so, but also no reason to wait. It's delicious value right now!
NOTE: to manage Virginia regulatory issues, these bottles carry the winery's "extra" label, Maison Jaine, normally used for private label wines in France. Same wine from the same bottling and bin, just with a different label for VA.
"There is even better Chablis character with hints of quinine, petrol, iodine and oyster shell adding breadth to the aromas of green apple, citrus rind and mineral reduction. I like the sense of underlying tension suffusing the middleweight flavors that coat the mouth with dry extract, all wrapped in clean, dry and sneaky long finish where a touch of bitter lemon slowly emerges."
