Dolin Dry and Rouge pretty much capture the essence of classic Vermouth, but Dolin Blanc is worth a look as well. Like the Dry version, this is white and nicely floral with a just-right wormwood bite. But it's a tad sweeter, a bit more flavorful, and a touch lower in alcohol. It's especially well paired with more strongly flavored spirits in cocktails, but try it with a splash of soda and lime for a refreshing treat!
