It's said that 150 years before Dom Perignon started to try to get rid of accidental fizz in Champagne, the monks of Limoux outside of Carcassone were making bubble on purpose. Their successors certainly keep the party going today with this zesty, no dosage, blend of Chardonnay, Chenin Blanc, Mauzac and 4% Pinot Noir made red for color. Red fruit, spring flowers and a touch tart cherry juice for lift make this a delicious afternoon sipper, brunch companion and fine choice for a cookout dinner!
For You If: You enjoy pretty pink fizz that has plenty of flavor and no residual sugar at all - this is made with no dosage, so you're just tasting the vibrant South of France fruit.
Not For You If: You're looking for a lot of structure/bite or a bit of toasty/yeasty character - although this is made like Champagne, the focus is on freshness and fruit above all.
