Livio Sassetti's son, Pertimali winemaker Lorenzo, loves sparkling wine. But the high sulfur levels in almost all commercial Prosecco gives him headaches. In 2012, he and an old friend with a few hectares of prime, hillside vineyards in the heart of the Valdobbiadene DOCG. By extending lees contact and keeping fermentation tanks just above freezing all the way through fermentation, he's able to bottle with less than 20 g/l of added sulfur - a tiny fraction of what most producers use.
And, this 90% Glera and 10% Bianchetta blend is so delicious, Lorenzo gets to use far less sugar at bottling, too! This is bone-dry, vivid and very fresh Prosecco with subtle green apple, Bartlet pear, and fresh white flower flavors. A juicy burst of lime comes up on the mouthwatering, dry, refreshing finish. Delicious stuff.
