Organic/Bio This is terrific, if ultra-low production (around 900 bottles), "Brut Zero" Champagne that you really should consider drinking from a big Burgundy glass (because it's very Burgundy-like indeed). The vines grow in Champagne's far northern edges, where David Bourdaire's grandfather planted a tiny plot of Chardonnay on sandy soil amidst the Pinot Meunier that dominates the surrounding vineyards. The rows were planted ultra-dense (12,000 plants per hectare), so all work is done by horse-pulled equipment or by hand. The base wine ferments in tank and barrel before blending and spending 4 years on the lees and then being released with zero added sugar.
It's beautiful stuff, starting with the big aromas of crushed hazelnut, green apple, pear, lemon and zested lime skin. The flavors add a dash of nectarine and plenty of chalky minerality that runs through the very long finish where notes of stone fruit and toasted nut linger nicely. Certainly ready to drink but also built to improve for 5+ years, this is a rarity not to be missed.
