A very old style of Barolo winemaking, this is 100% Nebbiolo that is pressed off when the fermentation is nearly done and then poured over the skins of Barbera left from that wine’s pressing. After a couple of hours, the now dry wine goes back on the Nebbiolo skins and macerates for 60 days while malolactic fermentation finishes before aging in large oak cask for a year. The results are a wine full of dark cherry fruit, a touch of rose petal, a juicy feel, and lovely, refined, supple tannins. The wine will hold and improve for a half-dozen years and gain more Barolo character if you want to wait. But it’s built to enjoy now with all kinds of rich ragus and mushroom dishes.
