An outstanding 1er Cru Mercurey that shows the flesh and grip this region is famed for – and the value, too! Caroline Fyot and Alexia Russo worked in luxury products and finance in Paris before deciding to move to Burgundy and make wine. They earned their oenology degrees in Beaune and worked harvest at Dom Rois Mages with Felix Debavelaere and others before purchasing around 6 HA of vines in Mercurey, Bouzeron, and Beaune and making their first vintage in 2018.
This is from a site Caroline and Alexia farm under contract to the landowner (thus the “Chai” vs “Ch”), picked by hand at perfect ripeness, fully destemmed, fermented gently and aged in oak (just 20% or so new). Already lovely aromatics echo the deep flavors of crushed raspberry, currant, black cherry and fresh earth. With air a bit of spice and floral accents emerge on a wine that flows nicely and closes with youthful grip. Decant and drink with duck or beef now and enjoy – 2035 or so.
