This is that – and a lot more. It’s “real” Gavi, from the prime DOCG vineyards on the Piedmont coast, grown with care by a family at it since 1949 and made all in steel for super-fresh crispness. A big pop of lemon and Granny Smith apple welcome you to the party before a bit of green melon adds roundness and soft herbs – chive, chervil – and a lick of chalk minerality bring extra freshness to the bone dry finish. The cut and verve make this an excellent match for shellfish, ceviche, and any kind of fried food, but there’s enough body (at just 12.5% alcohol) to keep things equally appealing on pop-and-pour just because you’re thirsty. And if you don’t finish the bottle you open on Tuesday, you’ll be just as happy with the glass you pour yourself to kick off the weekend.
