Organic/Bio Lower ABV Alessandro Cutolo is all about the mineral, saline, side of wines from Lugana on the southern shores of Lake Garda and Riviera del Garda in the hills on the western side of the lake. Here he brings that focus to his “Chiaretto,” the local name from pale rose from grapes like Gropello, Marzemino, Barbera and Sangiovese. Locally, it’s called “the wine of one night,” meaning after crushing late in the day, the juice stays in contact with the skins for just a few hours before pressing, giving just a pale blush of color.
If you’re looking for rosé to drink with the kinds of food you’d normally pair with Albarino, Muscadet, or steely Chablis, this is for you. It smells of just picked red berries, peach blossoms and crushed limestone. In your mouth it first shows crunchy early season strawberry and salty mineral flavors with a lot of snap and cut. As you keep sipping, peach and apple flavors join the party, giving the wine depth and dimension. From first to last, though, it’s wonderfully dry, intense and mouthwateringly refreshing. A classic pairing is simple fish – grilled, sauteed or even as crudo. But it’s just as delicious with fried foods, grilled pork or a good clam pasta.
