Organic/Bio Lower ABV As with all his Pouilly-Fuisse wines, Christophe Thibert ferments and ages 80% of this cuvee in tank and 20% in new and second-use French oak. The oak-aged wine tends to show a little reduction before blending and bottling, so when Burghound visited the winery to taste, Christophe only showed him the tank portion of the wine. It was impressive then and, now that it’s all together, even better. There’s terrific density and concentration here, but nothing heavy or thick. With an hour of air, it opens beautifully to show layers of fruit, chalk, hazelnut and tangy butter aromas and flavors that linger through a fantastically long finish. Better from 2026 and drinking well through 2035 or more, this is a brilliant value in very high-end 1er Cru white Burgundy.

Aromas of smoked apple, mineral reduction and citrus zest give way to rich, caressing and concentrated medium-bodied flavors that deliver huge length on the borderline painful finish. This chalky and saline-inflected effort is impressively powerful and built to reward mid-term cellaring.”
