Lower ABV Notice the finish. “Bourgogne Blanc” covers Chardonnay made anywhere in Burgundy and this is about “Bourgogne Blanc” as it gets. It’s 50% grapes from in and just next-door to Chablis in the north and 50% grapes from the Macon, 125 miles south and the other end of Burgundy. Put them together and some wild magic happens.
The aromas start with Chablis – oyster shell and limestone and green apple – before Macon’s richer golden apple, peach and pear come up. On the palate Macon leads with a caressing feel and building Asian pear and apple fruit. Then, boom!, up comes the salty minerality and iodine of Chablis with a squeeze of lime and seashell bite. Long on the palate – flavor from front to back – and wildly long on the finish. Give it 30-60 seconds after you swallow then check in – you mouth will be remaining very happy. Great with shellfish, grilled or roasted poultry and all by itself.
For You If: You like the richness of Macon whites - this has lovely ripeness and body - or the minerally cut of Chablis - this gets really stony with air; you love a delicious wine that finishes long, long, long!
